Banana Spice Protein Muffins

These muffins are incredibly soft, tender, and fluffy, perfect for a snack a couple for breakfast.  I love heating one up in the microwave for 20 seconds and spreading a light laughing cow cheese on it.  In this recipe, I used no flavoured protein powder however you vanilla and banana flavoured ones would be delicious as well.  


This recipe uses coconut flour which I want to caution those first experimenting with this flour to be wary of recipes that call for more than 1/3 cup of coconut flour and just a normal amount of eggs, liquids, or other types of moisture (eg: yogurt, bananas, apple sauce etc...) because the coconut flour can and will turn a baked product in a dense hockey puck if there is not enough moisture in the batter. 

Baking notes: I used Kamut flour in this recipe because it has a slightly sweet flavour, this allowed me to greatly cut down on the amount of stevia or other sweeteners used.  Kamut flour is not gluten free although it is much easier to digest than regular wheat flour.   

Banana Spice Protein Muffins (makes 12 regular size muffins)

Ingredients

  • 1/2 cup Coconut Flour
  • 3/4 cup Kamut Flour
  • 1 heaping tablespoon Ground Flax Meal
  • 1/2 cup & 2 tablespoons Protein Powder
  • 1/8 cup Baking Stevia
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • 1/2 heaping teaspoon Cinnamon
  • 1/4 teaspoon Nutmeg
  • 2 teaspoons Vanilla Extract
  • 3 tablespoons Almond Milk
  • 1 cup Mashed Banana (~2 large bananas)
  • 1/2 cup Egg Whites
  • 3/4 cup Nonfat Greek Yogurt


Instructions

  1. Preheat oven to 355 degrees Fahrenheit, either line muffin tin with foil liners or spray with non stick cooking spray
  2. In a large bowl, throughly mix together all of the ingredients.
  3. Bake for 22-25 minutes until tops are golden brown.
  4. Cool for 10 minutes and enjoy!
To store in the refrigerator:
Once cooled, line bottom of container with paper towels, place cooled muffins in container and line the top of the container with more paper towels and close the lid.
